Jen’s Yummy Salad – Jennifer Eaves

Let’s face it we all love food. One of my secrets to eating healthy and staying fit is to find, create, and make foods I enjoy and look forward to eating. This salad is one of my go to, yummy, healthy meals. I LOVE LOVE LOVE this salad, it tastes as good as it looks. YUM!😋


Lettuce (I like romaine, green leaf, or spinach)

Add any or all of the following:

Chicken (marinate in teriyaki sauce, then cook)

Mango-cut in small pieces

Fresh pineapple-cut in small pieces

Red pepper cut in small pieces

Purple cabbage cut in very small pieces

Mandarin oranges


Green onion

Nuts (cashews, slivered or sliced almonds)

Won ton skins fried in coconut or olive oil


¼ cup Extra virgin olive oil

½ cup rice vinegar

¼ cup honey

1 tsp. sea salt

Dash pepper

1 T. sesame seeds

Marinate chicken in teriyaki sauce for at least an hour, grill or cook on stove top, cut in small pieces and set aside. Cut lettuce, add to bowl, cut veggies and fruit in small pieces sprinkle on top of lettuce. Then add nuts, chicken and won ton skins. Put dressing ingredients in blender, except for sesame seeds, thoroughly mix dressing, then add sesame seeds and mix briefly. Add dressing right before serving or serve on side.
