Blueberry Oatmeal

This morning I woke up, excited to begin this 30 day journey of vegan-ism. Unsurprisingly, the day went well, and it felt easy to stick to my diet. From other people who have done this for 30 days, I know that following the diet starts to get hard around the fourth day.

This first day felt smooth because of how excited I was to try something new, prepare different foods than I normally would, and really begin this journey. I even bought a new water bottle (32 ounces) to get me excited about doing this.

For breakfast this morning, I drank 32 ounces of water and ate oatmeal with blueberries. I ate half of the oatmeal around 9:30, and finished the rest around noon.

For a snack around lunch, I had one pear. I also drank 32 ounces of unsweetened cranberry juice and water mix. At this point in the day, I felt satisfied, as it is usually later in the afternoon when the hunger really hits.

At 4pm I had a peppermint luna bar to hold me over until dinner. I drank another 32 ounces of water, and finished my day with a bowl of lentil and vegetable soup.

All in all, I feel like the first day went well in that I stuck to the diet, didn’t have any desires to break it, and I felt pretty satisfied. Where I didn’t do so well was in terms of nutrition and calorie count. After I uploaded everything that I ate, I was surprised and a little disappointed in the results. But since it was only the first day, this merely posed the task of planning a better food schedule and diet.

The calories consumed on January 31st, 2019.
Protein, Carbs, Fiber, Sugars and Fat consumed.
